Foodie Friday!

I thought I would start posting some of my tastiest vegetarian recipes for your enjoyment.


I made this as an appetizer for a holiday dinner where it was inhaled in minutes...

Fave Bruschetta

In a mini food processor, blend together:

-1/4 cup extra virgin olive oil
-small clove chopped garlic
-1/2 cup fresh basil leaves
-splash balsamic vinegar
-salt and pepper to taste

In a medium bowl toss together:

-medium ball of fresh mozzarella, cubed
(Narragansett Creamery from Whole Foods is fab)
-2 medium tomatoes, cubed
-olive oil mixture

To serve the bruschetta, toast baguette slices in the oven for ten minutes
or so after brushing them lightly with olive oil and spoon tomato mixture
on top. Awesome with a glass of your favorite Italian red wine. Yum!
